As I’ve mentioned before, I’m a customer of Abel & Cole and get an organic fruit box and veg box delivered every fortnight. This week I opened the box to find approximately one dozen, plump juicy dates. Therefore, I thought I would share a very simple, yet delicious recipe that I prepared this evening that has dates at the heart of the ingredients.
Ingredients Fresh Dates Bacon (one slice of bacon per date) Mango Chutney Process Slice the dates lengthways, without actually cutting them completely in half, to leave a sort of pocket. Remove the stones and add half a teaspoon of Mango Chutney into each of the dates. (I actually used a Mango Chutney tonight that had Kashmiri chilli’s in it for an extra kick) Wrap each date in a single slice of bacon and hold together with a cocktail stick (if necessary). Place on a baking tray and roast in the oven (200c) until the bacon goes crispy, turn them over half way through to make them crispy all over.This is a great and simple dish if you want to make some party food and is also a great tapas dish.
